Wow, this year is flying by already. I know, it's only 4 months in but really, already???? It seems like just yesterday we were celebrating Christmas.
I hope that all had a wonderful Easter. I know that we did. Pat and I went out both Friday and Saturday and kicked some butt against another couple in darts and danced the night away on the other night. Funny, Saturday evening we came home very, very late and still had to hide the Easter eggs in the yard. That was quite fun.
It was a very busy weekend. On Saturday we went to the annual Easter Egg Hunt, I made the traditional "popcorn baskets" with the kids, Pat colored Easter eggs, we attended one of my daycare kids' first b-day and then went out later.
Sunday we had planned to make prime rib for dinner. That's a first. Pat had mentioned steaks but I figured that we would spend as much on that as we would prime rib so we opted to test our cooking ability. Pat did the honors and I would have to say that we will be having that meal more often for a holiday treat. MMMMMMMMMMM, was it good!! Of course our daughter had put the roast in the freezer the day before when we purchased it so come Sunday we had thought our plans for a good family dinner were ruined. I mentioned spaghetti and well, compared to prime rib that was like mentioning bread and water.
Lo and behold, I figured out a way to thaw it without nuking in and ruining it. Whew, it was close though. We ultimately didn't get to dinner until 8:00 in the evening but the wait was well worth it.
Pat and I are heading on another get away this weekend and looking very forward to the vacation. It was a gift from the in-laws that we got for Christmas and we have finally decided to use it up. We're heading south this time, to Red Wing, another beautiful place in the great state of Minnesota. This time though we have decided to take Friday off and get an earlier start so the vacation doesn't seem so short.
Can't find much to post on in the news but have been enjoying all the comments that people have been leaving and the different perspectives. Thanks oodles......
